Ok, so I don’t know about you, but corn grits is my obsession! Since I was a little girl, my favorite hot breakfast has been grits, eggs, and bacon. But now that I’m a new mama, I want to lower my carb intake on my "mom-bod" weight management journey. Imagine my surprise when I came across this amazing faux grits recipe. It’s low-carb, gluten free and grain free all in one dish! Y’all, I’m a Super Target gal, so I’m all about getting everything I need in one place! I should also note that since these faux grits are made of cauliflower, they are super satiating, nutrient dense, high in fiber, a good source of antioxidants, and an easy-to-prep veg that won’t break the bank. So what are you waiting for?!? Indulge yourself with these gourmet faux grits today! 

Ingredients Needed:
one head of cauliflower
1/4 cup heavy cream
4 ounces grated sharp cheddar cheese (I used white cheddar)
2 Tablespoons butter
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 finely chopped jalapeno pepper
1 Tablespoon chopped parsley
1 thinly sliced green onion

How to Prepare:
Steam the cauliflower florets in a covered pot or steamer for 10 – 15 minutes until tender. Then in a food processor or blender, add steamed cauliflower florets, cream, cheese, butter, salt and pepper. Process until smooth. Add your finely chopped jalapeño and parsley. Pulse a few times to combine. Then pour into a bowl and stir in your green onion.
