Cookie portion 

2/3 cup almond flour
2 tablespoons unsweetened cocoa powder 
2-3 tablespoons sweetener of your choice I use organic stevia blend
1/2 teaspoon pink salt
2 tablespoons butter or coconut oil

For the filling

2/3 cup heavy whipping cream
2-4 tablespoons sweetener of your choice I use organic stevia blend
1/2 teaspoon pink salt
2 teaspoons vanilla extract 


For the cookie portion 

1. Add butter or coconut oil to pan and lightly toast almond flour. Be careful not to cook on to high of heat as it will burn. 
2.  Add sweetener, cocoa powder, and salt to a small bowl and mix together well. Put 1/3 of the crumbs in ramekins and press firmly on the bottom. Place all six in the freezer. Leave the remainder cookie portion in bowl and also put that in the freezer. 

For the filling portion

1.  Put empty bowl in freezer for 5-10 minutes
2.  Add heavy cream to a bowl and blend on high until stiff peaks, which is a cool whip consistency. Add vanilla extract.
3.  Add sweetener, and salt continue blending until well mixed. 

Take out a 1-2 tablespoons of cookie portion from bowl and set aside. 
Combine the rest of the cookie portion to the vanilla filling and mix well. 
Pull ramekins out of freezer and evenly fill with each with vanilla filling, and cookie mixture. Sprinkle the tablespoon of cookie mixture on top of each filled ramekin.
Place in refrigerator to chill for 10-15 minutes.


Peppermint Mimosas

Peppermint Bark Mimosas 

1/4  cup chocolate chips of your choice (sugar free if doing keto) melted
3  candy canes, crushed 
1 bottle champagne of your choice 
6 whole candy canes

  1. Melt chocolate in microwave or on stove. Place into a small plate. Crush up candy canes in a baggie with a rolling pin.
  2. Pour crushed candy canes onto a separate plate. Dip rims of champagne flutes first in chocolate, then in crushed candy canes to coat glass. 
  3. Add 1 drop of Peppermint Vitality per glass then top with champagne. Add one full candy cane to glass before serving.

I made these for my son's teachers, but really this is the perfect gift for anyone. I mean who doesn't do laundry?  Plus, it is such a cute way to provide a safe and effective way to soften and freshen clothes. 

Fabric softeners and dryer sheets contain chemicals like benzyl acetate (linked to pancreatic cancer), benzyl alcohol (an upper respiratory tract irritant), and other chemicals that are known carcinogens, and neurotoxic. These products are intended to get trapped in your clothes, which means they rub on your skin constantly, seep into your pores, and get into your body. These toxic chemicals can cause all kind of health problems. It’s time to cut out those dryer sheets and fabric softeners and make the easy switch to dryer balls. Gifting them is a great way to share health with your friends.

Write a little thank you note and let them know, “This little snowman will replace the need for dryer sheets. Mr. Snowman can be beneficial to your health because he eliminates toxic chemicals hiding in your dryer sheets. Toss him in the dryer with your clothes. When the laundry is dry, pull the wool balls out, apply 3-5 drops of oil to the wool balls, toss them back in and tumble for 5 minutes for soft fresh scented clothes.”

I used to think that nothing was better than hot chocolate as a kid. The box kind with all the little cute marshmallows. 

But nothing is better than hot cocoa from scratch. NOTHING.

Hot Cocoa Recipe 

2 cups of Almond Milk or Heavy Cream. 
2 Tablespoons of Unsweetened Cocoa Powder
2 Cups water less if you like yours really creamy
Sweetener of choice. I did a few Truvia packets until I felt it was sweet enough
Top with homemade whip cream and some cinnamon



Keto Chocolate Chip Pancakes

Keto Chocolate Chip Pancakes
I love a good pancake, the fluffier the better. I've been through so many recipes and I have finally come up with a really good one. It's fluffy but still delicious enough to not dry out your mouth. 

Keto approved! 


3 Tbsp. coconut flower
1-2 Tbsp. granulated sweetener
Pinch of baking soda
3 large egg whites
1/2 tsp vanilla extract 
1-2 Tbsp. sugar free chocolate chips
3 Tbsp. Heavy cream

Combine all ingredients except chocolate chips, heavy cream and water. 
Mix throughly. 
Add in heavy cream, and water until the batter is at your desired thickness. I prefer mine thicker and fluffier. 
Add more water to make them thinner. 
Mix in the chocolate chips. 
Fry on pan with your favorite toppings. 
I add blueberries, raspberries, sugar free maple syrup, and some extra chocolate chips.
