Keto Avocado Brownies

Ingredients

2 lily's Chocolate bars
1 ripe avocado
1 stick of butter
2 oz almond flour
1/8 cup walnuts
1 tsp. vanilla extract
3 large eggs at room temperature
2 egg yolks at room temperature
1/2 cup sweetener of your choice I use pyure 

Directions

  1. Combine butter, chocolate, and pyure in a pot on low heat. 
  2. Stir occasionally until melted. 
  3. Remove from heat and add avocado, almond flour, vanilla, and eggs. 
  4. Mix well with blender, or hand mixer.
  5. Add in crushed walnuts, and stir. 
  6. Put in square pan and put in oven on 350. Bake 35 minutes. 
Enjoy.

Keto Lemon Blueberry Muffins

Keto Lemon Blueberry Muffins










These keto muffins are so yummy I actually ate the whole batch before my husband came home and had to make more. 
Oops. Luckily they don't take long to whip up.  They make a delicious, and convenient breakfast if you are on the go. 
Just grab one and run out the door. You can also make a few batches and freeze them for later.

Ingredients

1 cup of almond flour
1/2 tsp baking soda
1 cup organic frozen blueberries
5 tablespoons heavy cream
2 tablespoons pyure Sweetener
1 large egg lightly beaten
1/4 teaspoon salt
nonstick cooking spray I used olive oil
18-24 drops Lemon Vitality (absolutely necessary for the delicious lemony taste)

Directions

Mix all dry ingredients together, then add in wet ingredients. Wisk together throughly. Put in a muffin pan. (I used a 6 muffin mini cast iron). 
Bake in oven on 350 for 35 minutes or until golden brown. 

Try not to eat the whole batch like i did!

Why Elderberry Syrup
Elderberries are particularly rich in flavonoids especially anthocyanins these work deep in supporting the immune system and keeping it strong and resilient. Some research suggests that  anthocyanins in elderberries boost the production of cytokines. These are protein's that act as messengers for the immune system, this helps to support the bodys immune system.

They have been used for centuries to treat

  • Cystitis/Urinary Tract/Bladder Infections
  • Allergy Relief
  • Digestive Health
Why add oils? 
The specific oils I added are very well known at helping to support a healthy immune system. Thieves was inspired by the Legend of four 15th-Century French thieves who covered themselves with Rosemary, Clove and other specific botanicals that they used while robbing the dying, and the dead during the plague. When they were caught people intrigued and wanted to know why they never became ill. I added in oregano as this ones is a very potent essential oil that is also a great addition to help give the immune system a good boost. Lemon and Cinnamon I added mostly to give it a extra sweet flavor but both of those vitality oils also are excellent at supporting the immune system as well! 

Please note that not all essential oils are safe for ingestion. These are non GMO and approved for ingestion by the FDA. In addition, I decided on essential oils over herbs because therapeutic essential oils are 75-100x more potent than herbs. Giving me a bigger boost to my immune system!!

Ingredients

1 cup of dried elderberries (you can get them from a health food store) 
2 cups of water
1/2 cup of local raw unfiltered honey. 
Vitality Essential oils of your choice

Directions

  1. Add 1 cup of dried elderberries, and 2 cups of water to crock pot. Cook on low all day about 8-10 hours. I periodically stirred mine. 
  2. Put berries in  mesh strainer and push out as much liquid with a spoon as you can. Do this with the whole bath of berries. 
  3. Add 1/2 cup of honey or more for your sweetness to warm liquid and stir to mix well. 
  4.  Let cool and add your Vitality oils 
  5. 3 drops Lemon Vitality 5 drops Thieves Vitality 2 drops Cinnamon Bark Vitality 1 drop Oregano Vitality 
  6. Add to a airtight container like a canning jar.

Ingredients

1 Cup Mayonnaise
1/2 Cup Sour Cream
2 Teaspoons Dried Parsley
1 Teaspoon Dried Dill
.5 Teaspoon Garlic Powder
.5 Teaspoon Dried Minced Onions
.5 Teaspoon Pink Salt
.25 Teaspoon Pepper
1/4 Cup of Unsweetened Almond Milk

Directions

Mix all ingredients together and store in a air tight glass jar. 

Chocolate Pudding

This is a very rich chocolate taste, you can add more sweetener if it is too rich for your liking.

Ingredients

1 ripe avocado 
.5 tsp vanilla extract
1 tbsp of SF sweetener of your choice
1 cup almond milk
1/4 cup or less of cocoa powder
1-2 drops of Lemon Vitality or Lime Vitality (essential to remove avocado taste) 


Directions

Whip heavy cream with a hand mixer until stiff peaks form.
Peal avocado, and discard seed. Combine avocado, vanilla, almond milk, stevia and cocoa until smooth.
Add your favorite toppings. I use homemade whip cream, cocoa nibs, berries, or grated chocolate.
