Asian Style Sweet Pickled Vegetables
I love Vietnamese food and I am super crazy about the sweet pickled vegetables that they serve with their grilled meat dishes. So delicious!
One time, after attending a vendor event in Houston, mom and I went to one of our favorite Vietnamese restaurant and ordered grilled pork fried rice served with pickled carrots and cucumbers on the side. We loved the pickled veggies so much, that I told mom that I will figure out how to prepare this so we can make our own homemade oil-infused version.
After a few trials, we came up with an awesome recipe, and before you know it, we were having a Pickled Vegetable Make and Take event at the Oil Shop with several of our Oily friends. We had the best time. #diygirl

The other day my friend Marivel, came by and brought us a bag of fresh cucumbers from her garden. She's such a sweet friend! The next day we were enjoying sweet pickled cucumbers with grilled pork ribs. Yum! It reminded me how great this recipe is, and I am compelled to share it with you.

This recipe is super easy and very tasty. And just a word of advice ... don't ever ever ever skip the Ginger vitality oil. Just this one drop of oil adds a robust flavor to this appetizer. Enjoy!


Asian Style Sweet Pickled Vegetables

1/2 cup truvia sweetener or 1 cup sugar
3/4 cup white distilled vinegar
1 tsp pink Himalayan sea salt
1 1/2 cup distilled water
6 cucumbers, sliced (enough to fill two 16oz mason jars)
1 Tbsp Himalayan sea salt

Place cucumbers in a bowl and add 1 Tbsp of salt. Mix well and let sit for 30 minutes until cucumbers release their juices. Squeeze excess juice from cucumbers and add into the mason jars.  In a separate bowl, add the first 5 ingredients and stir well until sweetener or sugar is dissolved. Pour over cucumbers, and place in the fridge overnight. Enjoy as a snack, serve as an appetizer, or add to a plate of grilled meat as a side dish. Good refrigerated for a month!

Tips: 
* Be creative and use different vegetables. I have used cabbage, carrots, cauliflower, green peppers, daikon, onions, garlic etc.
* I have only used truvia sweetener for this recipe; if you want to use regular sugar or another sweetener, just adjust it according to your preference.
* You can add other Young Living vitality oils here. A drop of lime, parsley, or black pepper vitality oil would be good choices.

More tips:
Here's a few more ways to infuse your dishes with Young Living vitality oils … butter, salt, olive oil, water, and pretty much anything your heart desires.
Flavored Butter: Add one drop of essential oil to 1 tsp of softened butter.
Flavored Salt: Grab your empty Lemon, Lime, Basil, Rosemary or Thyme essential oil bottles and fill them up with good quality Himalayan sea salt; let sit for at least 24 hours. Voila! Oil-infused salt for your dishes.
Flavored Sweetener: Add 15-20 drops of your favorite citrus oil such as orange, lime, tangerine, lemon, grapefruit, or citrus fresh vitality oil to one cup of sweetener.
Flavored Sprays: Combine 1 Tbsp of Extra Virgin Olive Oil,10 drops of your favorite essential oil (oregano, basil, thyme, marjoram, rosemary etc) and filtered water in a 2-ounce food-safe, glass spray bottle. Shake well before each use and spray on food at the end of cooking. Perfect for pasta dishes.
Flavored Kitchen Oils: Grab a 2 ounce ood-safe dropper bottle and fill it with Extra Virgin Olive Oil (or your favorite kitchen oil). Start with just a few drops of your desired essential oil and add more until you've reached the preferred level of flavor.
Flavored Water: Citrus essential oils are a great option fro flavoring your water. They're cold-pressed from the rind so they aren't hard on your tooth enamel. Plus, they are filled with antioxidants! Start with one drop in a glass of water, and add more if desired.
