Sometimes, I look into my fridge and all I see are half full containers of leftovers and just know it’s time for an intervention. A Baked Potato Bar is in order. This is a great way to get rid of the last dregs of pretty much anything in your fridge. We put BBQ Pulled Pork, Superhero Spaghetti Sauce, Clean Plate Club Chicken Alfredo over a good baked potato. Of course, there are always the standard toppings, too: Bacon, Butter, Sour Cream, Shredded Cheese, Chives, etc. A little thinking ahead for the potatoes makes this a very quick weeknight meal that the whole family gets into.
The night before, wash and scrub your potatoes. I’ve learned that russets seem to work best but feel free to experiment. I let the potatoes dry on the counter overnight. In the morning, poke them all over with a fork, brush with olive oil and sprinkle with a coarse salt. Wrap them in aluminum foil and stick them in the crockpot. Turn that guy on low for 10 hours for 8 potatoes. When you come home from work, take them out and let them sit while you heat/prepare your toppings and then get after it. Easy.

Baked Potato Bar

Ingredients

  • 7 russet potatoes, washed and dried
  • Kosher Salt
  • Olive oil
  • Aluminum Foil
  • Topping Options: Shredded Cheddar, Bacon, Butter, Sour Cream, Chives, BBQ Pulled Pork, Ground Beef/Turkey, Chicken Alfredo Sauce

Instructions

  1. Wash and completely dry potatoes.
  2. Prick potatoes all over with a fork. Rub with olive oil, sprinkle kosher salt.
  3. Wrap each potato snuggly with foil and set in crock pot.
  4. Cook on high 5 hours or low 10 hours – I like low.
  5. Let potatoes rest 10 minutes after removing from crock pot.
  6. Top and serve.
