BAKED ACORN SQUASH & SAUSAGE


No brown sugar in this recipe :)

I was raised by my grandparents and this was a favorite from my childhood.  
Every single one of my kids love it too!





BAKED ACORN SQUASH & SAUSAGE DIRECTIONS

*Cut your acorn squash in half.   Take out the seeds (lol)
*Rub the rim and inside with lots of butter.
*Put a ball of raw ground breakfast sausage in the middle (I just fill the hole)
*Bake at 400' for about 45 min then flip the sausage balls over and put it back in for about another 30 min (basically til a fork inserted in the squash goes in super smooth. (Time varies a bit depending on your squash size. Ours were large)

We used jimmy dean sausage..about 3 lbs for what you see in this pic...no maple, bleck.  Haha.
If you desire to include some Vitality essential oils, a good rubdown with rosemary or black pepper would go nicely!

Put it right on the person's plate and they can scoop it out themselves with a spoon.

Serve with a nice layer salad :)
