Here's what you need.
Crust:
- 1 cup graham cracker crumbs
- 1/4 cup coconut sugar
- 1/2 cup melted butter
Filling:
- 1 can (15 oz.) pumpkin puree
- 1 cup coconut or granulated sugar
- 1/2 cup full-fat coconut milk or heavy cream
- 2 large eggs
- 1 tsp. vanilla extract
- 1/4 tsp. sea salt
- 1 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/4 tsp. ground nutmeg
- 1 drop Young Living Cinnamon Bark Vitality oil.
- 1 drop Young Living Clove Vitality oil.
- 1 drop Young Living Ginger Vitality oil
- 1 drop Young Living Nutmeg Vitality oil
Topping:
- Whipped cream (optional)
- A sprinkle of ground cinnamon (optional)
Instructions:
Preheat the Oven
Preheat your oven to 350 degrees
Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs and coconut sugar.
- Pour in the melted butter and mix until well combined.
- Press the mixture evenly into the bottom of a 9x9 inch baking pan lined with parchment paper.
- Back crust for 10 minutes, then let it cool.
Make the filling:
- In a large mixing bowl, combine the pumpkin puree, sugar, and coconut milk (or heavy cream).
- Add the eggs, vanilla extract, and sea salt. Mix until smooth.
- Gradually blend in the ground cinnamon, ground ginger, ground cloves, and ground nutmeg.
- Add one drop each of Young Living Cinnamon Bark, Clove, Ginger, and Nutmeg essential oils. Mix until evenly combined.
Assemble the Bars:
- Pour the pumpkin filling over the pre-baked crust, spreading it out evenly.
- Bake in the preheated oven for 45-50 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.
Cool and Serve:
- Allow the bars to cool completely in the pan before cutting into squares.
- If desired, top each bar with a dollop of whipped cream and a sprinkle if ground cinnamon before serving.
