I have been enjoying listening to the Young Living Virtual International Grand Convention online. It has been so convenient to just sit down and listen to the presentations and workshops, while working on the computer. One presentation I had to share was the recipe provided in the additional segment section titled ‘Wake Up with Young Living Segment 2 Saturday’.
These lemon power balls are nutritious, healthy and a great treat in the children’s lunch boxes, after sport or a quick snack. There are no refined sugars and they have healthy fats. Storage of the power balls in the fridge or freezer is preferred.
Some notes about the ingredients: I always buy organic coconut as most shredded coconuts contain sulphites (preservative 220-228). It is found in so many foods to give it a longer shelf life. When my daughter used to eat sulphites, she would have an asthma attack. Sulphites are linked to asthma.
Lemon oil has cleansing properties and adds a great flavour. Culinary essential oils last a long time and one drop adds a huge flavour hit, making them convenient and ready to use.
Young Living’s Protein Powder is nutritious and can be made into a shake. Protein is necessary for every cell in the body. Our bodies use protein to build and repair tissue, and it is an important building block of bones, muscles, cartilage, skin and blood. Our hair and nails are almost exclusively made of protein. The body needs relatively large amounts of protein and the body does not store it.
Luscious Lemon Power Balls
Ingredients:
- 2 cups organic oats (grind in blender until almost flour consistency)
- 1 cup coconut butter (melted)
- 2/3 cup honey
- 1/3 cup organic shredded coconut
- 1 scoop Young Living Vanilla Spice Pure Complete Protein
- 2 tbsp lemon zest
- 1 tsp vanilla extract
- 10-15 drops Young Living Lemon Essential oil
- dash Sea Salt
Method:
- Mix all ingredients in a mixer until cookie dough consistency.
- Use a spoon or cookie scoop to make into balls.
- If desired, roll in extra shredded coconut.
- Place in the fridge to set for 30 minutes.
