Sourdough Discard Brownies

Have you ever gotten into having a sourdough starter? Do you bake your own breads?   I didn't until a few weeks ago and now, I can see why people love it.

Do you know that sourdough bread is actuallyyyyyy good for you?   Let me tell you a few reasons why.   First, it lowers the glycemic index of the entire meal you eat it with by 25%~   That's crazy, right!!!!     andddddd as if that wasn't enough, In the process of making the sourdough starter, 90-95% of the gluten is removed in the process of becoming "sour" dough.    That's fantastic!!! So you can have your bread and cake and cookies, and not feel bad about it!    WOW!    



Sourdough Discard BROWNIES!
  • 150 g Butter melted (Coconut oil works great too)- or a blend of both
  • 200 g Chocolate milk or dark
  • 200 g Sourdough Starter can be unfed or active and bubbly
  • 200 g Dark brown sugar
  • 3 Eggs
  • 5 g Vanilla Extract
  • 50 g Cocoa Powder
  • 75 g All Purpose Flour
  • pinch Salt
  • 100 g Chocolate Pieces optional - for poking into the batter

INSTRUCTIONS

 Preheat the oven to 180C/350F.

  • Melt 200g of chocolate together with the butter.

    I do this on the stove in a glass bowl and pot of water.  I don't own a microwave. 
  • Once the chocolate and butter are melted together, add eggs, vanilla, sugar and sourdough starter to the same bowl and mix until well combined.
  • Then to the same bowl add the cocoa, flour and salt.
  • Mix until a liquid, molten batter forms.
  • Pour the batter into a glass (or whatever you have) 11x7 dish is what I used.
  • If using, poke the chocolate pieces into the batter.
  • Bake the brownies at 180C/350F for around 30 to 35 minutes (depending on your oven).
  • Dust with cocoa powder once removed from the oven.
